Gamay from very old vines in massale selection, planted at high density (10,000 vines/ha), certified organic and biodynamic. Hand-harvested at optimal ripeness in 16-kg crates. Vinification: all the work is done by gravity, full destemming (so not at all traditional for Beaujolais! there is no carbonic or semi-carbonic maceration here), maceration of the berries for 28 days, 18 months of ageing in barrels that have seen two wines and in clay amphorae. Bottled at the estate without fining or filtration.
