Intense, fragrant nose of white flowers, citrus, quince paste, with an exotic touch. On the palate, very delicate, balanced between the natural tension of Viognier on this cool terroir and the roundness of lees ageing.
100% Viognier from certified organic and biodynamic vines, planted at high density of 10,000 vines per hectare, on granite soils, cool terroirs of Beaujolais. Hand-harvested at optimal ripeness in 16-kg crates. Natural vinification: gravity-fed, direct pressing, fermentation in clay amphorae with indigenous yeasts, 8 months of ageing on lees in those same amphorae. The lees are naturally stirred thanks to the internal convection movements of the amphora.
