Nose: apple, minerality, candied orange peel... The palate is as complex as the nose, beautiful acidity and length. The wine evolves very, very nicely over the glasses. Don't finish it (too!) quickly!
François Rousset Martin
François Rousset-Martin is the rising figure of the Jura. Growing up in Beaune, he traveled through the most beautiful Burgundy vineyards from his youth, and very quickly developed a passion for wine. He also inherited the tradition of his grandfather, taken up by his father: “always keep a little vineyard as your garden, make wine for yourself and for the family!”. As a newly graduate in biology and oenology, he got the opportunity to take over some family vines in the Jura, and arrived in Nevy-sur-Seille in 2007, a few kilometers South of Château-Châlon. He rents vines, then buys them over the years to arrive at the current total of 10 hectares. While he was selling his grapes to the coop cellar (while already vinifying 25% of the surface), he made the switch in 2018 and started to vinify his entire vineyard on his own. The cuvées are always sulfur-free, with magnificent results in the bottle... Not to be missed!
François' juices are always so deep and complex. The Cuvée du Professeur is actually one step above them! With notes of almond, underwood, white fruits... Palate: really beautiful structure and minerality, rich and a lot of tension, beautiful length.
A topped-up cuvée so the style here is non-oxydative, with notes of candied pears and citrus, honey and a buttery touch. Palate: rich, concentrated, balanced, the length is incredible. Worth decanting.
The name of this cuvée is a reference to Julien Guillot's Cuvée 909... the founders of the Cluny Abbey (founded in 910) were in fact from Jura! Nose with notes of red berries, and some cherry. Palate: thin and luscious tannins, a lovely gourmandise by François!
