A blend of pears—Plant de Blancs and Poire à Faussey, a variety typical of Normandy—sourced from organically farmed trees, either grown on the estate or purchased from a grower in central Brittany. These are true poiré varieties. Hand-picked, the apples were matured for a month in order to concentrate sugars and tannins, pressing, natural start of the fermentation, bottled early February 2024, three months on laths, then disgorged early June. Unfiltered, no sulfur added.

Pauline and Édouard Cazals are behind Brittany's first professional vineyard, Les Longues Vignes. Édouard, a native of Normandy, got his first taste of agriculture at the age of 15, during vegetables harvest.
