A blend of bittersweet apples, Peau de Chien and Dous Moën varieties, from apple trees grown organically on the estate or purchased from an orchard in the center of Britanny. Hand-picked, the apples were matured for a month in order to concentrate sugars and tannins, pressing, natural start of the fermentation, bottled early February 2025, three months on laths, then disgorged early June. Unfiltered, no sulfur added. 930 bottles produced.

Édouard, a native of Normandy, got his first taste of agriculture at the age of 15, during vegetables harvest.
