A 100% Riesling cuvée from old vines planted on schist, fruit of the famous Scharzhofberger vineyard and its extreme slopes. The soil is ploughed up to six times a year, harvesting is done by hand, and yields are controlled. Kabinett signifies that the grapes that were ripe enough that the wine does not need chaptalizing, but without any trace of over-ripeness. The grapes are fully ripe, yet there is little residual sugar. Vinification is traditional and minimalist, with direct pressing, settling after 24 hours, fermentation and maturation in barrels.
