100% Chenin from vines grown organically: 80% planted on Limoux terroirs (South West of France) and 20% in Anjou (Loire Valley). Harvested by hand and naturally vinified at Laurent's urban winery in Bordeaux, that is actually an old bunker! Direct, slow, gentle pressing in a vertical wooden press, 6 months of aging on fine lees in barrels that have seen several wines. Bottled at the cellar without fining or filtration, just a micro-dose of sulfur.
