The Lambics of the Cantillon Brewery are called « young » after one year of aging and reach their full maturity after three years. The young beers contain the natural sugars necessary for the secondary fermentation in the bottle. The three years old beers bring their bouquet and their finesse.
Rosé de Gambrinus : blend of Lambics and raspberries at a rate of 200 g per liter. A beer with a tangy, fruity and fragrant taste. Just like the Kriek, the Rosé de Gambrinus has a maximum of « fruitiness » if it is drunk young. The age allows the Lambic to express itself fully and this at the expense of the fruit.
