Gamay from 100-year-old vines, planted on soils of granite and schist, planted around Romauld Valot's cellar. These are living soils, maintained without chemicals or weedkillers. Harvesting is done by hand to respect the grapes and preserve the indigenous yeasts. Vinification: whole bunches, carbonic maceration for two weeks without additives, soft pressing, 9 months of aging in wooden casks that have seen several wines. Bottled in May 2025 without filtration, zero added sulphur.
