100% Chardonnay from twenty-year-old vines, farmed organically (not certified), and planted on limestone soil placed on a base of cracked rock, a South-East facing slope sheltered from the prevailing winds. It involves buying grapes from a meticulous winegrower, with Julien monitoring the plot throughout the year. Manual harvest in small crates, direct pressing in whole bunches in a pneumatic press, light settling of 24 hours, fermentations and aging in barrels, 16 months of maturation in barrels of 228 liters.
