Blend from complanted vines with 85% Merlot, 7% Cabernet Sauvignon, 6% Cabernet Franc, 1% Malbec and 1% Carménère, grown biodynamically and hand-harvested. The Amoreau family’s approach to vinification is unique: the grapes are placed whole in a cement vat, with a few staves holding the cap down, while the fermenting juice overflows onto a kind of cement ledge where it cools down then naturally returns into the vat; a completely natural form of thermoregulation and oxygenation. 24 months of aging in old barrels, no sulfites added.
