100% Merlot from 20-year-old vines framed organically (not certified) and planted on a South/East facing hillside, on clay-limestone soils with a greater share of clay, which allows to keep some freshness. Manual harvest. Vinification: destemming, no crushing, maceration for about twenty days in order to infuse the fruit rather than extracting too much tannins. Soft pressing, 12 months of aging in 228-liter barrels then 4 months in vats. Bottled at the Estate without fining or filtration.
