A blend of Pinot Noir and Pinot Gris from young vines farmed organically on the mid-slope of the vineyard site known as Breitstein, which means "large stones". The vines are facing east and into the wind, planted on soils of granitic sand mixed with clay. Harvesting is done by hand (of course), followed by natural vinification: one week of maceration with whole grape bunches, then gentle pressing, and 11 months of maturation in demi-muid barrels. Bottled at the estate without fining or filtration, and no added sulphites.
