The Lambics of the Cantillon Brewery are called « young » after one year of aging and reach their full maturity after three years. The young beers contain the natural sugars necessary for the secondary fermentation in the bottle. The three years old beers bring their bouquet and their finesse.
Ashanti is a spontaneously fermented beer, made in collaboration with Misao La Maison des Poivres. A blend of two-year-old lambics with Gorilla Black Pepper, a wild pepper from the northern forests of the Republic of Congo, hand-harvested in the mountains of a protected gorilla reserve.
Ingredients: water, barley malt, wheat, hops, pepper. Bottled at Brasserie Cantillon on May 29th, 2024. Produced of Belgium.
