Iris is a spontaneously fermented beer made exclusively from Pale Ale malt. It is the result of combining two flavors that were prominent in Cantillon beers until the mid-20th century: the acidity from spontaneous fermentation and the bitterness from the use of fresh hops, followed by dry hopping. This unique character, combined with the absence of wheat, sets Iris apart from all other Cantillon beers based on Lambic.
