Maxime Dubuet-Boillot
Maxime Dubuet-Boillot, child of the 1989 vintage and grandson of a farmer from Corberon and a vigneron from Volnay, first turned his back on his family vineyards before finally returning to them for good. Maxime’s career began not in wine but auto racing, working as a mechanic for The 24 Hours of Le Mans. He pursued that passion for 10 years before heeding the call of his winegrowing roots. Leaving Le Mans for la Bourgogne, he went back to school and obtained degrees in viticulture, oenology and sales from the Lycée Viticole de Beaune. He did internships with the Boillot family and at the Domaine de Nuits Saint Georges, before taking over the family estate his grandfather Pierre Boillot founded. Today, Maxime cultivates five hectares of pristine vineyards including plots in numerous prestigious Premiers Crus, while striving to produce precise and harmonious cuvées that reflect his deep respect for the environment and his family traditions.
Peaux Rouges is "a cuvée that assumes its identity like a battle cry", says Maxime, and gives Burgundy stereotypes a new lease of life! A deep, complex juice with bursting fruit, it's the expression of a fresh Volnay Pinot.
A very delicate nose with notes of black cherry, violet and peony, and a subtle hint of spice... Palate: this is some serious juice, with very fine tannins, and great ageing potential.

A beautiful Volnay that needs to lay down in your cellar, still fiery, with notes of cherry, blackcurrant, tulip, oak. Palate: tight tannic structure, without astringency, long aromatic, slightly mineral. Decanting is recommended in its youth.
