Brut Cider - Organically grown apples from Clohars-Carnoët orchards in southern Finistère, in Brittany. Native yeasts, fermentation in an old, re-heated barrel from a Normandy cooperage, aged for three months in this barrel, natural foaming. Bottled without fining or filtration, without pasteurization or any addition of sulfites. The barrel was originally bought for the eau de vie, but after tasting the barrel-aged cider, Nolwenn and Matthieu liked it so much that they continue to produce it every vintage!
