100% Xarel.lo Vermell (the grape variety in its red version, very rare and only found in Catalunya), from vines grown organically and harvested manually, with controlled yields. Natural vinification without additives: one week of maceration in amphorae, then Joan makes a saignée, which means he takes the free run juice, without pressing, then this juice is fermented and aged for six months in oak barrels that have seen several wines. Not fined, unfiltered, without added sulfites.
