Gin Shiso - Birdie
Birdie
Complex on the nose, with no overpowering alcohol notes; this is a fresh, floral, and herbal gin, reminiscent of the small shiso leaf. On the palate: a distinct minty quality, a hint of sweetness, balancing the freshness of lemongrass with the floral notes of hibiscus. Beautifully refreshing, enjoy it neat or with a tonic.

Birdie gins are made from French wheat alcohol produced in Picardy. Once the alcohol is received, a slow reduction with osmosis water is carried out, followed by maceration of herbs, spices, and botanicals. One-shot distillation (also sometimes called single shot): the botanicals and the alcohol are combined from the start, and the whole is distilled only once in a DES pot-still, for a richer and more integrated aromatic profile. The distilled spirit comes out of the still at around 77°, then undergoes a new, very gradual reduction, down to 44° to reach a perfect balance between alcohol and aromatics.
Birdie Distillery, based in Lille, was founded in 2019 by Gauthier Boidin and Thomas George, two friends passionate about travel and spirits, who decided to switch careers and team up to create this great Made in France project — something tangible, both gastronomic, creative and human.
The name Birdie refers to a small migratory bird that goes off to find spices, taking us on a journey through their gin recipes. Each recipe is a tribute to a country, offering a beautiful taste round trip without leaving your living room!
