100% Cinsault from 66-year-old vines planted on hard limestone soils in the commune of Aspiran. Yields around 26 hl/ha. Natural winemaking: total de-stemming by hand, 45-day maceration in vats, pressing, 10 months ageing in stoneware jars. Bottled without fining or filtration, no sulfites added.
