Blend of 90% Picpoul from 33- and 5-year-old vines planted on clay-limestone terroir in the Marseillan commune, with 10% Terret Bourret. Harvesting is done by hand, with yields around 30 hl/ha. Selection of the finest grapes from the plot, followed by total destemming, 16 days of maceration of the berries, very gentle pressing in a vertical press, without settling, aged on lees for 5 months. Bottled without fining, filtration or addition of sulfites.
