A 100% Syrah from the vineyard site known as Tamaris, a terroir of worn pebbles on clay-limestone soils, on a gentle slope near the banks of the Palme lagoon. The estate is certified organic. Grapes are harvested by hand using small crates, and only in the morning. Vinification: maceration for 20 days, some of the grapes are detemmed, one to two light little pumping over, very little extraction. Fermentation finished in barrels then matured 10 months on the fine lees. Bottled with zero added sulphur.
