100% Grenache Noir and Blanc, from 41-year-old vines planted on sandy limestone soils in Carcassonne. Harvested by hand at very low yields – only 11 hl/ha. Vinification: after direct pressing, Antony uses only the best juice from “heart of the press”. The wine is bottled by gravity according to the lunar calendar, followed by 5 months of ageing in stacks, and then disgorged by Antony’s team. Bottled without fining, filtration or added sulphites.
