A blended cuvée of 70% Mourvèdre and 30% Macabeu, the grapes were bought to organic winemakers close to the Estate. Manual harvest. Vinification: vatting and maceration in whole bunches for the Mourvèdre, direct pressing for the Macabeu. End of fermentation and five months of aging in barrels that have seen five wines. Unfined, unfiltered, zero added sulfites.
Marc Castan lives in Leucate in France’s Aude department. This future enfant terrible was born in Narbonne, where he grew up impassioned by both land and sea.
