A 100% Chenin cuvée, made from vines farmed organically (the entire estate is certified) and planted in the Saint Lambert du Lattay area. The grapes are harvested by hand at maturity using small crates. Vinification: direct pressing, natural yeasts, transfer to barrels that have seen several wines for fermentation and one year of maturation. Unfiltered, and zero sulphur.
