A very expressive nose with floral and mineral notes, as well as brioche, citrus fruits, liquorice, pear, dried fruits, coconut... Racy and powerful, direct, sharp and very elegant, with lovely bitter notes on the finish. A wine in almost perfect equilibrium... no – perfect.

A blend of Grenache Gris (50%) and Blanc (50%), from 90-year-old vines grown organically and planted on a terroir of schist and limestone. The Gaubys are also adepts of polyculture, which they use to recreate biodiversity around their vines. Manual harvest and controlled yields. Natural vinification: delicate pressing of whole bunches, light settling of the must, indigenous yeasts. 15 months of aging in large barrels, then another 15 months in bottles, at the estate. Bottled by gravity, without fining or filtration.
