Késako ? - 2018 - Patrice Delthil
Domaine Calimas

100% Macabeu from vines grown organically and planted in Latour-de-France on shales and marls, quite a fresh terroir. The vines are worked with a horse, light plowing between the rows. Manual harvest during one week, Patrice alternates one day of "picking" of the perfectly ripe bunches, with one day of pressing. Natural vinification, 10 months of aging in 500-liter stoneware jars that have seen several wines. Unfined, unfiltered, bottled at the Estate without any added sulfur.
