Blend of Grenache Gris with just a bit of Macabeu, from purchased grapes provided by an old organic winemaker, from vines planted on schist soils. Viticulture and vinification are straightforward and natural; it’s above all about beautiful grapes picked at ideal ripeness. Natural vinification, 9 months of aging in casks that have seen several wines, on fine lees. Bottled without fining or filtration, just a micro-dose of sulphur.
Cyril Fhal
Cyril Fhal launched his 5-hectare estate in 2002 in Latour-de-France, just 5 km from Calce, home to numerous renowned winemakers. The young Parisian, his viticulture/oenology diploma in hand, had been on the look out for parcels in the region when he stumbled upon these old vines – between 50 and 100 years old – which no one wanted to work, because they were planted on steep slopes unsuitable...
