Blend of a dozen of parcels around the Banyuls Cru, on the towns of Collioure, Cerbère, Port-Vendres and Banyuls. 90% Grenache Noir, Blanc, and Gris, 10% Carignan. Old vines of 50 years on average, grown organically, with grass cover between the rows, planted on terraced parcels with a steep slope. Soils of shale. Whole clusters, without pumping over the must, fermentation in wooden vat and stainless-steel tank. Aging: half in Burgundy barrels and half in stainless steel vats. Unfined, unfiltered, no added sulphur.
