Blend of 35% Syrah, 35% Grenache and 30% Carignan, from vines in conversion to biodynamics and planted in the small town of Baixas, on clay-limestone soils. Manual harvest. Vinification: the Syrah is harvested first and macerated for five days in whole bunches, then pressing, the whole bunches of Grenache and Carignan are added to the Syrah juice, for five days of infusion. Everything is pressed then aged in vats for 7 months. Bottled in March 2022 without fining or filtration, just a micro-dose of sulphur.
