A blended cuvée made of 50% Chardonnay from Limoux and 50% Colombard from Gers, from vines grown organically and harvested by hand. Vinification at Laurent's urban winery in Bordeaux, which is actually an old bunker! Slow, gentle pressing in a vertical wooden press, followed by fermentation and barrel ageing on fine lees, without new oak, for 8 months. Bottled at the winery without fining or filtration, just a micro-dose of sulfur.
