Souffle - 2022 - Laurent Bordes

Les Chais du Port de la Lune

Notes of pear, citrus, yellow fruist, slightly herbaceous. Palate: a fleshy, enveloping, unctuous white wine, with a lively finish, a real "souffle" (breath/blow) of freshness. A gastronomic wine, a balance between opulence and digestibility.

A blended cuvée made of 50% Chardonnay from Limoux and 50% Colombard from Gers, from vines grown organically and harvested by hand. Slow, gentle pressing in a vertical wooden press, followed by fermentation and barrel ageing on fine lees, without new oak, for 8 months. Bottled at the winery without fining or filtration, just a micro-dose of sulfur.
