100% Merlot from a single, 1.5-hectare plot, farmed organically and planted in 2001 on clay-limestone soils. Hand-harvested, the whole clusters are pressed directly, fermentation begins in tanks, and at the end of alcoholic fermentation, Antonin transfers the juice to airtight brewing tanks, allowing the wine to easily develop its secondary fermentation thanks to its 15 grams of residual sugar per liter. Not fined, not filtered, not disgorged (but very pure, with little to no sediment), just a micro-dose of sulfur.
Antonin Jamois
Antonin Jamois, born in 1979 and originally from Paris, was in no way predestined to become a winegrower... After studying agronomy, he left for Argentina and Brazil, then settled for 10 years in Madagascar (hence the name of the Estate!) where he worked as an aquaculturist and as a scuba diver. It is the birth of his daughter that motivates him to come back to France in 2014. Antonin returns...
