A 100% Auxerrois cuvée from vines farmed organically, and hand-picked at the beginning of October 2020. Vinification is all natural: direct pressing, fermentation launched in vats, then bottled without filtration in November 2020, and not disgorged. Zero additives, zero added sulphur! Favor standing storage before serving, so that the lees can settle.

JÉRÔME FRANÇOIS
Jérôme François settled in Ostheim in 2014. The young carpenter couldn’t resist the call of the vine and started his estate with a few plots from his grandfather and the barn of his great uncle! Late 2017, Jérôme teamed up with Yann Bury. The man grows his vines biodynamically, and works the soil not with a tractor but with two horses, Sirus and Fastochex. A flock of black Ouessant sheep...
