100% Pinot Noir from old vines planted on plots acquired in 2019 and cultivated biodynamically ever since. This is the “VogelGarten” (the “jardin des oiseaux” in french, meaning "bird garden") site, a south-facing, mid-slope limestone terroir, between the Furstentum and Mambourg Grands Crus. Hand-harvested at full ripeness, with intentionally low yields. Vinification: half destemmed, followed by one week of cold pre-fermentation maceration, then two weeks of maceration. Pressing, followed by 18 months of aging in 228-liter barrels, without new oak.
