100% Gamay from organic vines planted on red clay soils rich in iron oxide, with limestone outcrops. Harvested by hand. Natural winemaking: 15 days of whole-cluster maceration in large stainless-steel vats, a few pumping-over with a bucket, gentle pressing, 9 months of aging in old 228-liter and 300-liter barrels. Bottled on the estate without fining or filtration, just a micro-dose of sulphur (1.5 gr/hl).

Henri Chauvet, child of the 1987 vintage, is a new winemaker based in Boudes in Auvergne. After quitting his job in insurance banks, he got his viticulture and oenology diploma, and trained alongside Jérôme Bressy in Rasteau, then with the legendary Thierry Allemand in Cornas.
