Kohki Iwata, a young Japanese-born vigneron who arrived in France 10 years ago, today brings to us wines from his wine negotiant business WA Sud in the Hérault department of southern France. Following prestigious apprenticeships with such iconic figures in natural wine as Olivier Cousin and Jean Foillard, in 2015 he began working at the Domaine des Soulié in Saint Chinian, where the vineyards have been farmed organically since 1960. The 27-hectare estate of clay-limestone soils, situated at an altitude of 250 metres, has developed a unique ecological approach: the estate is 100% self-sufficient in green electricity. A year later, in 2016, he was given the chance to buy his first grapes from this same estate, and began an under-the-radar project vinifying himself, with the support of Rémy from Domaine des Soulié. Like his certified organic grapes, the work in the cellar has also been done as naturally as possible, to make wines that are clean, without chemical additives, and thus without sulphur. Pure Juice! Take note, these are rare pearls, exceptional cuvées made in very limited quantities. We’ve already witnessed the stunning rise of several Japanese winemakers settled in France, and Kohki will doubtless be no exception!
An intense nose of jammy black fruits. The palate is full-bodied and wild, with beautiful structure. Showing a touch of volatile acidity at this stage, it’s best to wait until autumn 2020 to enjoy this, if possible, to give the wine time to settle into place. A wine with great potential for evolution.
