Fabien Daviaux

Fabian Daviaux, child of 1987, is at the head of Champagnes Chavost, a unique cooperative that produces organic and natural champagnes and brings together a dozen families from the village of Chavot-Courcourt. Born to winegrowing parents, the adventure began very early, but it bored him. He wanted to be an oncologist, so he studied biochemistry... and finally became an oenologist in 2010! He travelled to South Africa, Napa Valley and New Zealand and refined his winemaking techniques. In 2019, he became the oenologist of the cooperative in his childhood village, with "a few" conditions: to produce organic and natural Champagnes, in small barrels or vats, without added sulfur, only vintage wines. Demanding standards that he wants to follow out of his love for tasting wines without sulfur. "I want to make clean Champagnes, the ones you would enjoy in wine bars, wines for pleasure, to relax and enjoy life, and Champagne contributes to that!” We can only agree!
