A wine that’s approachable in its youth yet promises superb aging potential, with notes of blackberry, strawberry, nutmeg, dried herbs, and honey… On the palate, the tannins are silky, the aromatics lean toward garrigue with a subtle sanguine touch — all finesse. Decanting recommended.
Dominique Hauvette
Dominique Hauvette — truly one of the great ladies of French wine — founded her domaine more than 35 years ago, back in 1988. Born into a family of restaurateurs, she first led a life full of detours: ski instructor, legal advisor, even house painter. Then, by a happy twist of fate, she bought a home in Saint-Rémy-de-Provence in 1984. Four years later, a retiring neighbor offered her two hectares of vines… and the adventure began. At 44, Dominique earned her degree in oenology — no small feat — and her wines quickly gained recognition. Encounters with two legends, Eloi Dürrbach of Domaine Trévallon and Laurent Vaillé of La Grange des Pères, helped affirm her instinctive approach. A lifelong horse lover (there are around forty on the estate!), she crafts wines of remarkable depth: expressive young, yet with stunning aging potential. In 2020,La Revue du Vin de France named her Winemaker of the Year, and awarded her the coveted three stars in the Guide Vert 2026.
