A brut cider, this is a single-varietal cider made exclusively from the Dous Mann variety. The untreated apples were harvested at Jean Le Gall’s orchard in Arzano, in the Finistère region. Cider production at L'Apothicaire in Clohars-Carnoët: pressing, fermentation using indigenous yeasts, naturally sparkling, and a short aging period in tanks. Bottled without fining or filtration, and without pasteurization or any added sulfites.
