Aligoté from the Estate's vines, grown organically (and without using any sulphur in the vineyard) and planted on a steep hill, on a parcel located above the Monts de Fussey and just below the Mainbey lieux-dits. The soils are plowed by horse. Manual harvest, fermentation and aging in 350-liter barrels, without new oak, for 12 months, single and thorough stirring of the lees during the summer, then a second winter of aging in stainless steel vats before bottling in February 2026. Not fined, not filtered, micro-dose of sulphur.
