100% Chardonnay from Alice and Olivier's négociant business. The grapes come from organic winemakers who share the same values than the couple. Here, the grapes come from the Mâconnais, marking the third year of collaboration with this particular grower. The grapes are harvested by hand when very ripe, followed by a natural vinification: long fermentation in barrels on fine lees, without stirring, then maturation for one year in casks, without new oak. Bottled at the estate without fining nor filtration, just a pinch of sulphur.
