100% Chardonnay from old vines of more than 70 years old, grown biodynamically and planted a clayey limestone soil maintained by ploughing. The grapes are handpicked, and the whole harvest is slowly pressed in a pneumatic press, with no added sulphites or yeasts... or anything else for that matter. This cuvée is a blend of the 2018, 2020, 2022 and 2023 vintages, with a prolonged aging on fine lees in barrels that have seen several wines, before blanding and a few months in vats. Unfined, unfiltered, no added sulphur.
Philippe Valette represents the third generation of vignerons to run this 8.5 ha estate (15 ha if we count the vines of his brother Baptiste) located in Chaintré, a village on the border between the Mâconnais and Beaujolais appellations.
