Grape variety: 110% (to reaffirm what others have denied) Chardonnay, from 70-year-old vines grown on a clayey limestone soil maintained by ploughing. The grapes are handpicked, and the whole harvest is slowly pressed in a pneumatic press, with no added sulphites or yeasts... or anything else for that matter. Matured 12 months on fine lees in barrels that have seen 3 to 5 wines then 18 months in vats.
Philippe Valette represents the third generation of vignerons to run this 8.5 ha estate (15 ha if we count the vines of his brother Baptiste) located in Chaintré, a village on the border between the Mâconnais and Beaujolais appellations.
