Gamay from vines in conversion to organic farming (since they're a young estate!), planted in 1990 in the commune of Vincelottes in the Yonne department, on a South-facing hill that shows limestone soils. Manual harvest and sorting of the grapes, yields around 30 hl/ha. Vinification: 21 days of maceration of the whole bunches without any punchings of the cap, gentle pressing, 11 months of aging in barrels without racking. Bottled at the end of August 2023, without fining or filtration, micro-dose of sulfur (total SO2 <15 mg/l). Only in magnums.
