Gamay from vines in conversion to organic farming (since they're a young estate!), planted in 1990 in the commune of Vincelottes in the Yonne department, on a South-facing hill that shows limestone soils. Manual harvest and sorting of the grapes. Vinification: 10% of direct pressing and for the rest of the harvest, 12 days of maceration of the whole bunches without any punchings of the cap, gentle pressing, one year of aging in a 700-liter old cask without racking. Bottled on the 9th of September 2024, without fining or filtration, without added sulphur. Only in magnums.
