Pinot Noir from old, 58-year-old vines planted on clay-limestone soils of great minerality, over a shallow layer of brown limestone. This parcel of just 48 ares is located at the edge of the village of Gevrey-Chambertin, and bordering Mazis-Chambertin. The gentle slope is oriented southeast. The grapes are harvested at full maturity, 100% destemmed, followed by prefermentary maceration of 4 days, alcoholic fermentation for 18 days thanks to indigenous yeasts, a cap punch-down once a day, and finally maturation in oak barrels for 18 months with 30% new oak. The wines are neither filtered nor fined.
