A cuvée of Chardonnay grown on 3 terroirs, with Viré-Clessé in the majority bringing richness, Monbellet planted with old vines from 1946, and Les Crays whose chalky soil provides acidity. The vines are grown biodynamically, the whole estate is certified since 2001. Yields around 40 hl/ha. Grapes are harvested by hand, with sorting in the vineyard and on tables when necessary. Natural vinification: slow pressing, long aging on lees in casks that have seen several wines, for 30 months. Unfiltered, just two grams of sulfur before racking.

Julien Guillot is a face of youth and renewal for the Mâconnais. He started working in 1998 on his family’s estate, spearheading its conversion to biodynamics, and finally taking over the reigns in 2001.
