100% Pinot Noir from vines grown organically, planted in 1990 in the commune of Vincelottes in the Yonne department, on a South-facing hill that shows limestone soils. Manual harvest and sorting of the grapes. Vinification: maceration of the whole bunches for almost a month with one or two punchings of the cap, gentle pressing, one year of aging in old barrels of 228 to 700-liter, without racking. Bottled in October 2025 without fining or filtration, zero added sulphur.
