100% Sauvignon from two plots: 80% old vines planted in 1959, facing West on ferruginous red clays, and 20% planted in 1990 on white marsl, facing North. Harvested when very ripe, 25% of the grapes are kept in whole bunches for 8 days of maceration, while the rest are pressed directly. Separate vinification and aging: 24 months of aging in barrels, then blending of the direct press and the maceration, followed by an additional 7 months of aging in vats. Bottled in March 2025 without added sulfites.
