100% Chardonnay from vines grown in sustainable farming, planted on a total of ​​one hectare at around 350 meters above sea level. Manual harvest in small crates. Vinification: lightly crushed grapes, soft and long pressing, during three hours. Vinification: indigenous yeasts, fermentation and first part of aging without sulphur, aging in 500-liter barrels that have seen two to three wines, for 18 months. Bottled at the Estate after a light filtration.
