A 100% Vermentino vintage from organically grown vines planted on granitic soils in the village of Casta, north of Corsica. Manual harvesting. Vinification: direct pressing, natural cold settling for 24 hours, racking of the clear juice by gravity, all with indigenous yeasts. Five months of maturation on fine lees in stainless steel vats. Not fined, nor filtered, just a micro-dose of sulfur during bottling at the Estate.
